Michele Gualtieri is a professional chef, with experience working in some of the most prestigious restaurants in Italy, as well as London.
When it comes to pasta, though, he learned everything from his Nonna, a true pasta maker from Emilia-Romagna, who passed her love and expertise for authentic Italian pasta on to her grandson.
Michele now runs pasta making workshops in Florence, where pupils learn everything from the secret to achieving an amazing pasta dough, to an introduction to different types of closing - ravioli, tortellini, cappellacci... the list goes on!
