Michele Gualtieri is a professional chef, with experience working in some of the most prestigious restaurants in Italy and London.
When it comes to pasta, though, he learned everything from his Nonna, a true pasta maker from Emilia-Romagna, who passed her love and expertise for authentic Italian pasta on to her grandson.
Michele now runs pasta making workshops in Florence, where pupils learn everything from the secret to achieving an amazing pasta dough, to an introduction to different types of closing – ravioli, tortellini, cappellacci… the list goes on!
We figured Michele might know some pretty amazing places in Florence. Here are some of his favourite places in the city…

TRIPPERIA POLLINI
"Lampredotto is the most famous street food of the city. It is made with the stomach of the cow + served in a bun with salsa verde + chilli oil. Something that you can't miss in Florence!"

LOCALE
"This place became the best cocktail bar in Italy. Locale is situated in an ex 'Medici' house. Ask the bartender for a tour of the building - they will take you to the underground floor + they will show you part of the old house. Try the Cocktail of Florence: 'Negroni'."

GIARDINO DI BOBOLI
"The Boboli Gardens is a historical park of the city of Florence. Originally designed for the Medici, it represents one of the first + most important examples of the 'Italian Garden'. It has large fountains + caves, among them the splendid Buontalenti grotto built by the artist, architect + sculptor Bernardo Buontalenti."
